I think the idea of nocturnal Beasts simply didn't occur to the Pevensies, mostly because Talking Beasts are so clearly people and for them 'people' has always been synonymous with 'human,' so there's a subconscious assumption that Narnians must be like humans unless specifically proven otherwise. I further think that this assumption lasted longer than it otherwise might because Talking Beasts, like humans, are able to tweak their schedules to a certain degree... and I suspect a lot of them became more diurnal than normal during the Winter, if only to take advantage of what warmth Jadis let slip around the edges of her spell.
