I don't have the time, the patience, or the supplies to pickle anything, but now that you mention it, it occurs to me that my coworker Melodrama's dad is really into types of preserving food (I think it's a survivalist thing, go figure), so perhaps I could get him to pickle them in return for half the crop. *ponders options*
