According to the lecture series, the common theory is that the first cheese was probably an accident -- someone stored some milk in a bag made from a sheep or goat's stomach, and after a day or so, whoops! Suddenly curds! Then people experimented a little and decided this was Useful and also Tasty. :)
Cheese is indeed helpful on the lactose intolerance front, since most of the lactose gets converted into other, more digestible chemicals during the cheesemaking process. Fermentation is magic! But while lactose intolerant people can eat cheese, they're unlikely to invent it, since they wouldn't be consuming and storing animal milk in the first place.
