wherein Liz loves her crockpot

I am making pot roast in my crockpot as I type. I turned the heat on at 8:30pm, and I expect the food to finish cooking somewhere between 4:30 and 5:30 in the morning, so I've set my alarm for 5:00am, at which point I will stick the results into the fridge (and then go back to bed, obviously) so they will be ready to eat when I get home from work on Thursday. I have a bottle of red wine ready and waiting expressly for that purpose. :-)

It's my mom's recipe, more or less, which basically involves a pound or so of beef, one can of Campbell's cream of mushroom soup, one packet of Lipton's onion soup mix, a soup-can full of water, and a cup or so of red wine. Carrots and onions are optional extras, which I added in generous measure because it's easier to have the veggies included than to cook a side dish every night.

My apartment smells so delicious, oh my god. :-D

ETA: It seems to be cooking faster than expected -- probably because I'm making less food in a smaller pot -- so I will probably declare it done around 3-ish and then go to bed.

I wanted to reply to this last night but my gf was in bed and all cranky so I had to hold off...but! This sounds awesome. I may just be jealous of you, I think. *wants yummies*

I think next time, I will use slightly more beef. My purchase weighed .95lb raw, but I could easily have fit up to 1.15lb into the pot, and I like beef so a bit extra would not go amiss. I will also use less water -- probably only half the soup can rather than a full soup can -- because the sauce came out a bit more like broth than gravy, whoops. But regardless of broth-vs.-gravy consistency, it still tastes delicious! Mmmm, pot roast... :-)

Slow cookers need surprisingly little liquid in them. I always start out thinking "that's going to be too dry" and then halfway through the cooking I'll look through the lid and go "oh, that might need some thickening".

Yeah, my accidental chicken soup is a case in point. I'd only meant to make chicken with some sauce, and then, whoops! Soup. Oh well, as long as the results taste good I'm not going to complain about having more stuff to mop up with my bread. *wry*
